JOB DESCRIPTION

Glass Dining & Lounge Bar is seeking a new head chef to run a team of passionate chefs.

Glass Dining and Lounge Bar offers a contemporary dining experience with stunning views that overlook the Broadwater. It features high-quality modern Australian cuisine, with an emphasis on fabulous, fresh seafood caught in the local area. It is an award-winning restaurant that often caters for a variety of events. Attention to detail is a must, as is demonstrated culinary expertise.

To be successful in this role it is ESSENTIAL that you have:

  • Several years’ experience progressively training a kitchen team
  • Lead & develop the Kitchen team with an ambition to make the Glass menu better than ever
  • Proven leadership skills in building capacity in teams and setting high standards
  • Ensure a high standard of guest satisfaction through the highest quality of food presentation
  • Create a high-performance culture by leading from the front and bringing the team with you
  • A demonstrated track record in creating innovative menus at the highest level.
  • An understanding of modern Australian cuisine and current market trends
  • Ability to cost all menus and maintain food cost control practices
  • Sound knowledge of all kitchen financial controls – COG's, Salaries & Wages, ordering etc.
  • A passion for building a team and a positive culture
  • An understanding of food safety and HACCP principles
  • Self-motivation, can-do attitude

Salary Range 75-90K (based on experience)
